Recent studies of self-assembly in binary systems bio-surfactants, either microbial origin or saponins extracted from plants, are reviewed. Saponins water reported the first section include aescin, glycyrrhizin, and quillaja saponins, while rhamnolipids discussed second on surfactants. Studies surface activities a natural starting point characterization surfactants, but here we focus mainly physico-chemical structural properties self-assembled bulk structures solution, often characterized by scattering techniques.
